The queen of the house. Jolca specialises in the variety MANZANILLA de SEVILLA.
The second most important variety, GORDAL de SEVILLA. Both varieties are typical of the Aljarafe region of Seville.
VERDIAL, from the Seville and Huelva area, is smooth and tasty and used mainly in dressings.
Manzanilla CACEREÑA from the northern region of Extremadura, Cáceres, and the southern part of Salamanca. Highly regarded as a table olive and produces excellent oil.
ALOREÑA de Málaga is also used for dressing and au naturel.
HOJIBLANCA de Córdoba, light coloured, rich, and famous for its high oil content.
